Are you not aware that there are RPG-specific programs that are much better suited to this task? Check out Battlegrounds: RPG Edition (http://www.battlegroundsgames.com/). This easy-to-use virtual tabletop software isn't just for playing RPGs online. In fact, it was designed to greatly enhance projector-based gaming setups like yours. The software's Fog of War feature dynamically reveals the map based on the virtual mini's positions, light source settings, and special abilities (like Dark Vision or Enhanced Night Vision). And combining that with the manual Reveal/Conceal tools gives you even greater control.
