Hello! :) I was curious...

Back in the day, I remember it being a cool thing to strip off the cooler on your video card in order to "properly" apply the thermal compound. The aftermarket compound would in most cases even be better than what the manufacturer used. I remember one I stripped down where the manufacturer applied stuff was just a giant blob of goo that had oozed out the sides and onto the card itself! However, with manufacturers being more conscious of their customers demands for performance, is it really that necessary any more?

In my case, I have two Asus GTX 680 DirectCU II TOP cards and I think their coolers are relatively easy to remove. Would it be worth my time? :/ Also, I'm not too up on what type of compound to use. I usually use Arctic Silver on CPUs but I have a tube of ceramic compound kicking around somewhere. Any recommendations? :)

No. And the most it'll buy you is probably 1-2C of better cooling performance.

If you're not tripping thermal limits regularly, there's no reason to even touching the cooler, in my opinion.
