First and foremost, welcome to the MPC Forums.
If you've never RAID'ed before, you should at least try it. Everyone should! That said if you want to protect your data, a simple nightly backup will do the trick. But it sounds like you already do this with your NAS. Depending upon how many hdd's you have, RAID 5 is the best option. As for your ssd's and OS. Raid 0 provides for some very very impressive I/O rates, just Google for all the posted CrystalDiskMark and AS SSD killer performance scores. But in the real world those benefits are almost [not always] never recognized. So it becomes a risk:reward decision. What will your new rig be primarily used for? Knowing this will dictate your Raid0 efficacy.
