Current Specs
ASUS P6T Deluxe V2
Intel X-25 SSD 160GB
Intel i7 920
12GB - PC3-12800
2 x SLI Geforce GTX 275
910watt - PC Power and Cooling

ASUS P6T Deluxe V2 - PCI Specs
PCI Express 2.0 x16
3 x PCIe 2.0 x16 (at x16/x16/x1 or x16/x8/x8 mode)

I am wanting to take out the two SLI GTX 275's and add two Radeon HD 7970's in crossfire.
I am wanting to know since these cards are PCI 3.0 if my system will handle two of these card?
Will my system slow the cards since I only have PCI 2.0?

cards will run at pci 2.0 speed.

There's no issue with running a PCI-Express 3.0 card at 2.0 speeds. The latest test checking this out was a GTX 480. It went all the way down to x4, and there was still no real ill effects.

OK, so it shouldn't effect the quality/speed of the cards running at 2.0 speed.
Is there any chance I will be pushing the limits of the PCI 2.0 channels with the new cards.
I don't want to spend the money on the cards if the quality/speed of the cards will effected because the PCI 2.0 channels can't handle it.

No. Let's put it this way, the GTX 590 was tested in SLI on a board that did the x8/x8 split, and showed no problems regarding performance. So 4 GPUs on a total of 16 lanes.
