The first thing comes to mind is Pertelian LCD: http://www.pertelian.com/

If you want to have an LCD in you 5.25" bay, and have a buck, then https://www.crystalfontz.com/products/select_kit.html can make a custom kit for you

If you are a bit on a DIY side, then get an HD44780 based text display from ebay (I just got one for $6.25), and then http://www.harbaum.org/till/lcd2usb/index.shtml has a schematic, code, and a guide of making a HD44780 to USB adaptor

However, I'm not sure how option 2 and 3 is good for Windows OS. Under linux, there is lcdproc which will output all kinds of useful info to any LCD display. I don't know of any lcdproc analog for windows.

Pertelian, on the other hand, comes with a great software solution for Windows, but not linux.
