I was wondering if running a crossfire set up of 6870's in 8x-8x mode will hurt performance compared to running in 16x-16x mode? I know it seems like a no-brainer but many people run both and I'm trying to find out if it really matters or will I still get the same performance out of it? Just hoping I'm not going to regret buying a 790 board when I should have spent an extra $80 for a 890 board.

It will hurt performance, but not very much at all really, maybe 8% or so at most, and only if you're running a huge resolution.
