MUST I only use 6' cables when hooking my pc up to my HDTV and my HD Monitor??? Can't I use an 8' HDMI cable and/or an 8' DVI-D cable?

There's no reason you can't. It's just that as the cable gets longer the signal gets crappier (but that starts happening after 15 feet for cheap cables)

Yeah, everyone knows why longer cables aren't as good as shorter cables, I just wanted to know the length at which degradation is noticeable.

I think that would depend on the quality of the cable, a cheap one would degrade sooner than a quality cable. I have used 6' and a 10' cable on the same connection with no discernible difference in picture quality.

IF you are really worried about the quality you could always run an active cable. I think I read they are good up to like 60'
