Fixed!

Turns out, the U3011 monitor resolution is 2560 for every connect (DVI, DisplayPort) *EXCEPT* HDMI. HDMI max resolution is only 1920. Part of the spec for th emonitor.

However, the 3014 monitor native resolution is 2560 for *all* connects, including HDMI.

So I moved the HDMI output of the GTX680 from the 3011 to one of the 3014s, and moved the DVI connect from the 3014 to the 3011 and everything is now 2560.

Plus, the laying 'u' that I was experiencing is also gone. Can move from any of the 4 screens directly to any of the others.
