For you I would stick with the Windows route and do the opposite of a gaming machine. Low-budget processor with plenty of hard drives.

Check out this guide with Windows 8 spaces. It's pretty nifty feature so you don't necessary need a RAID array.

Windows may also work best for familiarity's sake, and since it's DNLA compatible, you should be able to easily push content around devices. If you need remote access, Windows does have that feature (though it may not be on home editions) or you can use other applications like Team Speak Viewer or something.

I would only suggest Linux if you were planning on making an internet server, since it's easier to set on up on Linux (at least, in my experience).
