I have read a lot about the pro's and con's of each but still not entirely clear on the issue with crossfire/sli. What are the specific issues with running this setup, is it a big headache or small annoyances that require tweaking and tuning per game/app. I will be running 1920x1200 majority of the time and been considering a gtx580/6970 or gtx570sli or 6950crossfire running off a Asus P8P67 deluxe with a 2600k sandy bridge and 8gb ram powered by an antec 850watt trupower.

At that price range, multiple cards are definitely the best option. The best bang for buck there would be to get two soft-disabled 6950 2GB cards (unfortunately 1GB 6950s are hard disabled so this doesn't work on them), and unlock them to 6970s. No other card currently out can be unlocked like that.
