Would it be better to run 2 Sapphire hd7870 XT which has 1536 stream cores with the memory running faster but the stream cores are stock speed or go for 2 hd7870 Ghz editions which has 1280 stream cores with the memory and cores running faster? Or would I be better off running 2 Geforce GTX 660Ti?

Stop, collaborate and listen. Are you running a 4K screen to need such awesome power or perhaps 3 fairly average displays?

Where would ONE of those cards hold you back one bit in gaming? What are you running now / Have you ran one of those / should this be in help me buy or build? If it's just asking for speculation, this is considered as "bench racing" as it's pure speculative by just comparing cards. Old man story: When I was 17 I had a blown 997HP '56 Chevy that ran 10.2's. Bragging? No...Only took a well setup carb'd car with 680HP to break into the 9's. Comparing my engine to theirs, I should win each and every time. I should even win NASCAR if I could only turn left, and not blow up all the time.

Comparing those cards, you should win Indy too...but probably won't. It's just more than a few parts and should consider the whole build and not just the video engine, which can be pretty expensive to not get ranked at the end of the day. I'm in a garage, 560Ti's, SLI, dated 22" screens, and I'm doing fine. In the house, 660Ti, I don't do any better on 27's. It's relative as always.
