There are quad-core and even six-core CPUs out there.

What software actually takes advantage of multiple-core CPUs?

If you would swing by the folding @ home section of the forums, they can help you out to put your multi core processors to work... :mrgreen:

but seriously, windows uses the cores, Folding uses as many as you let it, there are a few games out there that take advantage of them(not really a serious gamer so no exact ones come to mind, sorry) video rendering uses them, lots and lots of programs use the extra computing power...
