I know I probably sound like and idiot but, if I bought two different cards that boat support sli/crossfire will they run together?

How do you mean different? As in different models from Nvidia (eg. 7600 vs. 8800) or same model from a different board manufacturer (e.g. BFG 9800GT and EVGA 9800GT)? If its completely different card models, no. If its the same card from different board partners, it'll work.

If you already have them, yeah, but don't buy them unless you're getting each for under $50.

I still wouldn't buy them. Would a GT 430 outperform them for only $10 more?

Heck no. A GT 430 hardly beats one 9600GT. For $35 each, that's not bad at all if your motherboard supports SLi and your PSU can handle them.
